The Hotel Fauchère was, like virtually all of the hotels in Milford, originally a summer business. Louis Fauchère would work during the winter months at restaurants in New York City. The present Italianate style building opened in 1880, with twenty–four sleeping rooms and other apartments, including a beautiful dining room at the rear of the house enclosed with glass. No record exists of the present building´s original architect, although it is likely that Fauchère, the master of details, was heavily involved in the design. Even at that early date, the Fauchère complex consisted of adjacent properties. The large red brick gothic-revival house on Catharine Street, to the east of the present Fauchère complex, became known as Delmonico´s Cottage. It is called this because that is where Mr.Delmonico and his family, from the famed restaurant, would stay when visiting their former chef, Louis Fauchère, at his elegant country establishment. The Delmonico connection was important to the success of the Hotel Fauchère as Delmonico´s was the first and most famous restaurant in America in the mid 19th century. Having worked there was a credential any chef would envy; to enjoy the friendship of its famed proprietor was a rare prize, which contributed greatly to the cachet of the Fauchère.
